Numerous cuisines feature blood soups: the Polish czarnina(duck blood soup), Korean seonjiguk (pig blood curd soup), and dinuguan, a pig blood stew from the Philippines. Blood sausage—a prominent feature of our own Louisiana cuisine—is gross, but not nearly as gross as blood soup, with its vampirish connotations.

 

Vietnamese Blood Soup is made with raw blood of ducks or geese (sometimes pigs), with peanuts and herbs on top. This is the typical protein-rich breakfast of the country people in Northern Vietnam, but is very dangerous because of the H5N1 bird flu virus.
